Stuffed Zucchini

After a fun trip to the farmers market I came back with more than I bargained for. So tonight the squash must be used! I decided to make stuffed squash but to only use the recipe that I found online as a guideline for my creativity. There is no actual recipe to write down since I through it all together, but here is how the process looked…

Fist I removed the insides of the two large zucchinis so that the walls were thin enough to hold their form but not thick enough that they won’t cook all the way…

In goes about half a purple onion…

Then half a red bell pepper…

I chopped up three small yellow button squash…

And into the pan they go…

along with three small baby purple potatoes that I pre-cooked a little and chopped up…

Next I decided that the recipe needed a little enhancement and I pulled out some frozen veggies from the freezer…

And in they go with the lid on to simmer for a bit till the onions start to turn golden brown…Let the mixture cool then add some sour cream to help bind everything and keep your veggies from falling all over the place when you cut into your zucchini!Another last minute add in would be the bread crumbs I pulled out of the cupboard…After applying a little bit of egg white wash on top to help the bread crumbs stick, sprinkle on the bread crumbs and place in the oven for the amount of time stated in the recipe then add cheese and chives on top and place under the broiler for 4 or 5 minutes…And there you have it! Beautiful and yummy!
